摘要(Abstract):
Lactic acid bacteria are important resources of probiotics and have a wide range of applications in many fields including food,agriculture,chemical industry,and medicine. At present,the well-known lactic acid bacteria are mainly concentrated in a few genera,such as Lactobacillus,Bifidobacterium,Strptococcus,Enterococcus,Lactococcus,Pediococcus and Leuconostoc. To expand our cognition of lactic acid bacteria,this paper attempts to provide an outline of the lactic acid bacterial taxonomy. Taxonomically,lactic acid bacteria belong to 653 species,39 Genera,18 Families,7 Orders of 4 Classes within the Phylum Firmicutes and 88 species,12 Genera,3 Families,2 Orders of 2 Classes within the Phylum Actinobacteria,respectively. Finally,the beneficial effect,safety and sources,and in vitro evaluation criteria for probiotic potential of lactic acid bacteria are briefly discussed.
